Researching Juicers: Which Is Preferable - Manual Or Electric?

A vegetable juicer or fruit juicer is a conical-shaped kitchen tool used for squeezing, or removing, liquid from various foods, especially fruit and veggies, for the purpose of drinking or adding flavor to other foods. The juicer is simple to use, although because of the possible hazards involved, should be used with care, caution, and expertise.

Two kinds of juicers exist - a manual, or hand-operated, model and an electric type.

Manual/Hand-Held Juicer

Juicing consists of inserting fruit wedges or veggie pieces cut side-down in the center of the juicer and then pressing down to squeeze the food and moving it back and forth so the liquid will run out of the rind and away from the pulp. The pulp and seeds are accumulated along the edges of the juicer, and the skin is then thrown away.

Electric Powered Juicer

A power or electric juicer mechanically removes juice from fruits, vegetables, herbs, etc. A proper procedure consists of inserting the article of food within and pressing the switch. The juicer then automatically squeezes juice out of the vegetable or fruit. As a result of its mechanical nature, electrical juicers tend to be far more hazardous than manual kinds, and so it is very important that users be coached how to properly use them.

Two kinds of electric powered juicers are on the market:

Centrifugal juicers - these are made up of a blade and sieve to separate liquid and pulp from skins or outer shells or casings. Centrifugal juicers cannot break fibres in food, so their use is somewhat limited.

Masticating juicers - these "chew up" the whole piece of food before, or in order to, squeeze liquid from the inside. Once the food becomes mangled, the juice naturally flows out. Masticating juicers can break fibres in food, so they have a much broader use than centrifugal juicers.

Incidentally, electric juicers and blenders are very different in performance and purpose. Electric (masticating) juicers are able to separate juice from fibres, whereas blenders, like centrifugal and hand-operated juicers, cannot.

The theory is that because fast-moving mechanical parts of a power juicer blow air into the food, creating greater and quicker oxidation to important nutrients, electrical juicers, especially those having variable speeds, are accepted to be of higher quality than manual juicers. This has not been verified, although it's a popular belief.
